SILLY WHITE GIRL SWEET CARAMEL APPLE TAMALES

i HaVE A teRribLE sweet  tooth.

so, when they told me I needed to be gluten-free I GRIEVED all the gluten loaded goodies i could no longer have

i imagined these tamales--MADE THEM and when i took them to work they were a hit

Maplelicious Sweet Tamales With Guajillo-Chocolate Sauce

 DRY MASA

2 tsp baking powder

CORN HUSKS

7-UP

BROWN SUGAR

CARAMEL ICE CREAM TOPPING'

CANNED APPLE PIE FILLING

CLOVES, GROUND

CINNAMON

PUMPKIN PIE SPICE

MONKFRUIT SWEETENER

CARDAMOM,GROUND

***WAX PAPER***

***FREEZER BAGS***

1. GATHER ALL OF THE INGREDIENTS TOGETHER

2. In a microwave safe bowl place 10 rinsed corn husks and cover with water (leaving at least 1 1/2" below the outer edge of your bowl)  PLace in the microwave for 3 minutes. you can leave in the microwave while preparing your masa.

3.  Stir with a wisk to thoroughly mix your ingredients throughout  this process. In a bowl I add about 2 cups dry masa (I buy mine at Walmart)add to your taste the spices--I added 1 1/2 tablespoons cinnamon    1 teaspoon each: ground cloves, pumpkin pie spice, ground cardamom.  Add 1/2 cup brown sugar and 3/4 c of the sweetener.  STIR WELL

4. remove the cornhusks and set near your masa bowl.

5. back to your masa---add 7up sparingly to your masa and stir until your masa looks like stiff mashed potatoes *if they crumble add more 7up.

ASSEMBLY

6. open your pie filling and ice cream topping

7. remove a cornhusk and place a large tablespoon of masa on the cornhusk. with the same spoon press the mound of masa to make a round hollow--place a small tablespoon of pie filling with a teaspoon of ice cream topping. fold the masa around the filling rolled in your cornhusk that you can tie with a piece of cornhusk then wrap it in wax paper

8. place each tamale in a freezer bag and place directly into the freezer

9. continue until  all tamales are wrapped and in the freezer


10. COOKING

PLACE FROZEN TAMALE (still in the wax paper) ON A PLATE FOR 5-6 MINUTES IN THE MICROWAVE

TOP  WITH WHIPPED CREAM OR VANILLA ICE CREAM

ENJOY!


YOU CAN USE ANY FRUIT PIE FILLING YOU LIKE

July 4th. . .and for dessert

PINEAPPLE BARS WITH CREAM CHEESE ICING
2 cups flour
2 tsp baking soda
1 (#2)can crushed pineapple(can use naturally sweetened/heavy syrup)
1/2 cup chopped pecans
2 cups sugar
1 tsp vanilla
2 beaten eggs

Mix dry ingredients together. Stir in pineapple, eggs, and vanilla. Add pecans and blend well together. Pour in to a jelly roll pan that has been well greased and floured. Bake at 350 degrees for 25-30 minutes. Let cool on rack while preparing icing.

Icing
8 oz pkg cream cheese
2 T butter
1 pound powdered sugar
3 tsp vanilla
1/2 chopped pecans

Blend cream cheese, butter, powdered sugar. Add vanilla. Mix well and spread on warm cake. Then sprinkle with chopped pecans. Cur warm cake and then refrigerate to cool.

PINEAPPLE ICEBOX PIE
1/2 pound vanilla wafers
1/2 c BUTTER
1 1/2 to 2 cups powdered sugar
2 eggs
1 small can crushed pineapple, drained
1/2 pint whipping cream

Crush wafers and put half on bottom of a Pyrex pie plate. Cream butter and sugar. Add eggs one at a time. Beat until smooth and creamy. Pour over crumbs in pie plate. Whip the cream and add the pineapple. Pour over butter and sugar mixture. Cover with rest of crumbs. Place in the refrigerator overnight.

Mock Apple Pie



When our son was just an infant I decided to make an extra effort to place some traditions in our lives. My husband loves apple pie. So I made this pie and he ate all but the slice I had. When I told him it was made from crackers he didn't believe me until I made another and he watched.

Now I am not sure if he really didn't believe me or he was willing game to jump on the "let's eat all the pie I want bandwagon".....hmmmm.

Regardless. This is a wonderful dessert
